About Waimata Cheese Company


Waimata Cheese Company is an artisan cheese producer owned and operated by Carol and Richard Thorpe of Gisborne. The company specialises in blue and white moulded soft cheeses, haloumi and feta made from cows’ milk. A portion of the milk required by Waimata Cheese Company is supplied fresh daily by Waimata Dairy Limited, which is also owned and operated by the Thorpes. The cheeses are handcrafted using traditional techniques by our team of cheese makers, many of whom have been with us since the beginning.

Quality Control. Waimata’s commitment to quality starts on the dairy farm and is fully integrated into every aspect of production and distribution. With numerous audits throughout the season Waimata ensures it is fully compliant with WQA and MPI’s stringent standards. Our comprehensive product testing regime ensures all batches are tested before release to ensure total customer satisfaction.

Sustainability. Waimata is committed to producing its milk and cheese products in an environmentally sustainable way. On the farm we use very little artificial fertilisers or antibiotics as we have a commitment to ensuring our girls are always well fed, healthy and happy. We are committed to protecting the Te Ari river, which runs down one of our boundaries, with riparian plantings and ensuring our effluent system is always working well. At our factory we recycle all the whey into stock feed, we have a comprehensive waste water treatment system and a solar hot water unit that helps to minimise the energy required to generate hot water.
